Creme BruleƩ by Chef Lynch Yield: 11-12 Each Ingredients: 10 egg yolks 1/2 cup granulated sugar 1/2 cup brown sugar 1 quart Heavy cream 1 Tbsp. vanilla Half Batch 5 egg yolks 1/4 cup gran. sugar 1/4 cup brown sugar 16 oz heavy cream 1 1/2 tsp vanilla Directions: 1. Separate the egg whites and yolks. Store the egg whites in a container with a label in the #1 refrigerator. Set aside the egg yolks for use in a future step. 2. Bring the heavy cream to a light boil in a heavy bottomed saucepan. 3. Mix in a stainless steel bowl with a wide whisk mix the egg yolks, granulated sugar, brown sugar, and vanilla together once the cream has reached the boiling stage. 4. Add the heavy cream SLOWLY with a ladle to the egg yolk mixture to temper the mixture together. 5. Pour the mixture through a chinois to ensure no eggs were cooked while tempering. 6. Set up a sheet tray with ramekins. 7. Pour the mixture into creme brulee ramekins and bring to the oven. 8. Pour water halfway up the ramekin sides in the sheet tray. ( If doing a half batch, use a hotel pan instead of a sheet tray.) 9. Close the oven doors and cook at 350*F with NO FAN! 10. Check the creme brulee in 20 minutes. They should be cooked until they no longer jiggle in the center. They may need more than 20 minutes to cook fully. Try to not allow any color on top of the creme brulees. For Service Order: 1. Unwrap creme brulee. 2. Pour creme brulee sugar on top of the creme brulee, just to cover with a thing sheet.The sugar can be found on the baking shelf. 3. Taking the torch, burn the top of the creme brulee until the top is golden. 4. Garnish with a thin twist of orange or another available fruit.
